Green Goddess Wing Dip

Green Goddess Wing Dip was made by accident. Well…Sorta.

A few days ago, I made a batch of Green Goddess Dressing to share on my Free Cookbook Club website. I used a recipe from the legendary Newport Beach, CA fine dining restaurant, The Stuft Shirt.

To be honest, although I had heard of it, I had never tried Green Goddess Dressing. Its heyday seems to have been in the 1950s and early 60s – a bit before my time. So I did not know what to expect. I planned to use it the way it was intended – On a large bowl of iceberg and romaine lettuce.

But somewhere between making it in the afternoon and suppertime, I decided on another, better use for it. As I tasted it from time-to-time (It’s best to let most sauces and dressings “rest” for a few hours between making and enjoying to allow the flavors to meld) my mind kept telling me that this would probably taste good on chicken wings.

So I scraped my planned dinner and cooked up a couple batches of Honey Lime Chicken Wings and Honey Chipotle Wings.

My girlfriend, son and I tried it out and we absolutely loved it.  We finished the whole bowl. The only lettuce that got close to it, was the leaves in the picture I took above. 😉




I have considered how I might change the original Green Goddess Salad Dressing to make it a better wing dip. But, you know what? I didn’t change a thing.  It’s perfect – taste, consistency, everything – just the way it is.

One note  – Be careful to not over salt. The sour cream, mayo and anchovy paste all have salt. You may not need any additional salt at all. Do use plenty of pepper, though.

This dressing was good on the Honey Lime Chicken Wings and Honey Chipotle Wings we tried. Since then we have tried Buffalo and several other wings with it and the creamy cooling of the sour cream was perfect. I can imagine a few wings that it wouldn’t match well with — maybe maple or peach — but I haven’t found any.  I can’t wait to try it on something with bacon.

Green Goddess Wing Dip Recipe

Original Green Goddess Salad Dressing from The Stuft Shirt, Newport Beach, CA

Ingredients




  • 1 cup Sour Cream
  • 1 cup Mayonnaise
  • 1 tablespoon Lemon Juice
  • 1 tablespoon White Wine Vinegar
  • 1 tablespoon Anchovy Paste
  • 1 tablespoon minced Parsley
  • 1/2 cup diced Onion (I chopped the onions in a food processor and they worked fine)
  • Salt and freshly ground Black Pepper, to taste

Directions

  1. Mix together sour cream, mayonnaise, lemon juice, vinegar, anchovy paste, parsley and onion.
  2. Season, to taste, with salt and pepper.
  3. Mix well.

Green Goddess Wing Dip may be made and  stored, refrigerated in covered container for up to 2 weeks.
