How to Choose Chicken Wings

The first thing to think of before recipes or parties is safety.

Pick the Right Store or Butcher

Pick a store or butcher that you have confidence in. I won’t dwell on this since you probably already have a favorite you trust.

Once in the store, however, don’t assume anything. Make sure you inspect the chicken thoroughly.

Check the package for the U.S.D.A. Grade A rating. The chicken wings in most supermarkets will be government inspected.

Look for secure, unbroken packaging and a “sell-by” date stamp.

What to Look For with the Wings

Physically inspect the chicken wings before purchasing. The skin should be creamy white to deep yellow, The meat should never look gray or pasty.

If you can, try to smell the wings. Any “off” odors could signal spoilage.
