Spicy Garlic Parmesan Chicken Wings

Learn how to make Spicy Garlic Parmesan Chicken Wings with the help of cookbook author Chris De La Rosa. While this is not a traditional Caribbean recipe, you will still notice some elements of Caribbean cooking – like the use of scotch bonnet pepper to give the wings a slight kick and the herbal notes we like so much on the islands.

Spicy Garlic Parmesan Chicken Wings Recipe

Ingredients

  • 3 pounds Chicken Wings
  • 2 tablespoons Vegetable Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon freshly ground Black Pepper, to taste
  • 1 Scallion, finely chopped
  • 2 sprigs fresh Thyme
  • 1/2 Scotch Bonnet Pepper, diced fine, no seeds
  • 3/4 cup finely grated Parmesan Cheese
  • 1 tablespoon fresh Parsley, chopped
  • 2 cloves Garlic, minced
  • 1/4 teaspoon Lemon Zest

Directions (Taken from the Video)




  1. Place wings in a large bowl.
  2. Season with oil, salt and pepper. (See note below)
  3. Add in scallion, thyme, Scotch bonnet pepper and about 1/2 tablespoon parsley. Reserve remaining parley.
  4. Mix well and allow chicken wings to marinate for about 1/2 hour.
  5. Preheat oven to 425°F.
  6. Place wings in a baking pan with a wire rack (See video.)
  7. Spray or brush wings with vegetable oil.
  8. Place pan in preheated oven, on middle wrap, and bake for 25 minutes.
  9. In a clean bowl, add garlic and Parmesan cheese. Toss to mix.
  10. Add lemon zest and reserved parsley. Toss well to mix.
  11. Remove wings from oven (they will not be fully cooked), place in a clean bowl. Add in the garlic/Parmesan mix and toss to fully coat the wings.
  12. Place wings back in oven and bake for another 10 minutes until done.  If you like, turn on the broiler and broil the wings for a couple minutes to brown them fully before removing. Watch the wings carefully so they do not burn.
  13. Remove from oven and enjoy.

Note – When seasoning the chicken wings you can also add 1/2 teaspoon garlic powder for a more pronounced garlic taste.
