As soon as I heard the name, Mahogany Glazed Chicken Wings, on The Splendid Table Podcast, I knew I was going to make them — and love them.

In case you haven’t heard it, The Splendid Table is a multiple award-winning public radio show (and podcast) about all things food.  It’s been on the air for over 20 years and, until recently, was hosted by the amazing cookbook author, Lynne Rossetto Kasper, and now by Francis Lam.

Marinate Overnight?

Mahogany Glazed Chicken Wings need to be “marinated overnight for the richest flavor.” So says the recipe on The Splendid Table.

I’m typically not a big fan of marinating wings. I don’t think the marinade does anything to the meat. In my experience, the marinade doesn’t penetrate the meat enough to make it worthwhile. Brining and basting work much better.

But, I’m also not one to argue with my superiors when it comes to cooking. Lynne Rossetto Kasper is FAR better at this than I will ever be. And while I’m not sure she personally came up with this recipe, I chose to stick to the instructions and marinate my wings overnight.

The wings turned out with a perfect golden mahogany glaze and were delicious. The flavor was Southeast Asian, with a nice mix of sweet and savory. I don’t know if it made the flavor of the wings “richer” or not (I could experiment — but why bother when I can be eating delicious wings?).

I made a batch of blue cheese dressing for dipping. While it was good on the wings, I found myself eating most of them without dipping.

Mahogany Glazed Chicken Wings Recipe

Ingredients

  • 1/2 cup Chinese Hoisin Sauce




  • 1/2 cup Chinese Soy Sauce
  • 1/4 cup Honey
  • 1/4 cup Chinese Duck or Plum Sauce
  • 1/4 cup Dry Sherry
  • 1/4 cup Cider Vinegar
  • 5 large cloves Garlic
  • 3 1/4 to 4 pounds Chicken Wings, rinsed

Directions

  1. In a blender or food processor, blend together all ingredients, except the chicken wings.
  2. Combine the purée with the chicken wings in a large ziplock bag (use more if needed) and refrigerate for 4 hours, or overnight if possible.
  3. When ready to serve, preheat oven to 375°F degrees.
  4. Line a large shallow baking pan with foil.
  5. Remove wings from bags and arrange on the pan. Pour marinade into a bowl and set aside.
  6. Roast wings 1 to 1 1/4 hours, turning often, about every 10 – 20 minutes, and basting with reserved marinade after each turn. Discard unused marinade after last basting.
  7. Start checking wings after 45 minutes for doneness. Continue to cook until almost done.
  8. Turn oven up to 450°F for about 10 minutes, turning once, to crisp.

Serve warm (best) or at room temperature.

IMPORTANT – Always discard all unused marinade after last basting.  Do NOT use it as a dipping sauce.  Marinade that has touched raw chicken should NEVER be eaten without cooking.
